Wae Rebo: this is not really a casual day trip. It is a long drive to the trailhead followed by a substantial hike, and it works much better as an overnight or multi-day outing.
Ruteng and the spider rice fields: possible, but long for a single day. Better if you are treating it as part of a wider Flores overland route rather than trying to speed-run it from Labuan Bajo and back.
