There is plenty to eat in Labuan Bajo, but not all of it tells you much about Flores. Tourist menus are everywhere. So is good seafood. If you want the local version, the trick is to look slightly past the obvious places and ask for the dishes that have been feeding people here long before anyone arrived with dive logs and linen sets.

If you eat one local thing first, make it grilled fish. Fresh seafood is one of the easiest wins in Labuan Bajo, and the simpler places often do it best.
The Dishes Worth Looking For
Jagung Bose: the dish most worth seeking out if you want a proper Flores staple. Corn, beans, coconut, filling, and much more regionally meaningful than ordering another fried rice on autopilot.
Roti Kompiang: the local sesame bread. Easy to eat with coffee, easy to carry, and exactly the sort of thing that makes a better souvenir snack than it has any right to.
Ikan Bakar: grilled fish in the local style. This is one of the most reliable good decisions in town.
Kopi Bajawa: earthy, full-bodied Flores coffee from the highlands further east. If a cafe offers local coffee specifically, that is the one to order.
Where to Find It
The night market is still one of the best-value places to eat in town, especially for seafood. For more specifically local dishes, the better move is usually to look for warungs and less polished spots just off the main harbour road.
This is one of those towns where the best meal is often at the place with the least interest in impressing you visually.
